Green Tripe
  Tripe is the stomach of ruminating animals (cattle, buffalo,deer, goats, etc.).
  The stomach content is a good source of essential enzymes, probiotics, minerals and
  pre-digested plant material like herbs and grasses.
  This stomach consists of four chambers, the rumen, reticulum, omasum and the abomasum.
  Swallowed food passes unchewed into the rumen and reticulum
  where it is regurgitated, chewed and mixed with saliva.
  Swallowed again, it passes through the reticulum and omasum into the abomasum,
  where it is further broken down by gastric juices, digestive enzymes & amino acids.
  * Gastric juices and enzymes aid in digesting and efficiently utilizing food.
  * Lactic Acid Bacteria is the good intestinal bacteria. It helps the body to absorb nutrients, inhibit the
  growth of harmful organisims, metabolize proteins & help eliminate toxic wastes from the body.
  * Amino acids play central roles as building blocks of proteins necessary for muscular development
  and as intermediates in metabolism.
   
  Woodson-Tenant Lab in Atlanta, Georgia analysed a sample of green tripe. Results showed
  Moisture 71.37% Linoleic Acid (EFA) 2.72% (recommended amounts)
  Ash 1.23% Linolenic Acid (EFA) 0.37% (recommended amounts)
  fat 11.7 % Lactic Acid Bacteria 12,000 CFU/G (Lactobacillus Acidophilus)
  protein is 15.1 % Calories 756.35 cal/lb. calcium:phosphorous ratio is 1:1
  pH 6.12 (great for digestion)
   
  "Green" tripe refers to the fact that it has not been altered - not cleaned, bleached or scalded.
  It's color is brown. Any green tint is due to the grass or hay the animal ate just before slaughtering
   
  The white tripe in the grocery store has been cleaned, scalded and bleached.
